Jessica Haslam's Honey Lime Enchiladas
1 1/2 pounds chicken, cooked and shredded
Sauce:
1/3 cup honey
1/4 cup lime juice
1 1/2 Tablespoons chili powder
1 teaspoon garlic powder
2 (10 ounce) cans green enchilada sauce
1 pound (or less, you decide) Colby Jack or Mexican blend cheese, grated
18 taco sized corn (or flour) tortillas
Mix together sauce ingredients then add to shredded chicken.
Let the sauce soak into the meat for about 30 minutes.
Lightly spray 9x13 baking dish with PAM. Pour enough green enchilada sauce to cover the bottom of the dish. Lay six corn tortillas over the surface of the dish. (The will be overlapping.) Top with half of the meat mixture, then cover with cheese. Layer another six tortillas and cover with some enchilada sauce and the rest of the meat. Sprinkle cheese on top. Layer last six tortillas on top and cover with the remaining sauce and cheese. Be generous with the cheese.
Bake at 350 degrees for 45 minutes to an hour.

I've had these! A friend of mine makes them. They are a crowd pleaser!
I made these tonight, and Sam is now obsessed. They are delic! I used the divine uncooked flour tortillas from Costco instead of corn. I also split it into two smaller pans so I could freeze one and it worked perfectly. :)
Two more things: They make bigger cans of green enchilada sauce that are perfect for this recipe. 19 oz and usually cheaper. Also, 1 1/2 pounds is SIX CUPS!!!! That is a TON of cheese. I just eyeball it but never use that much and they are still plenty cheesy.
WE LOVED THIS TONIGHT!!! The kids cleaned their plates, even. Pete loved it...not too spicy and a little sweet. Plus it was super duper easy, which is a big deal for me right now, because I'm losing energy! Thanks for the yummy recipe...I'm going to make it again to freeze...
Hey, we tried them on Laura's recommendation and loved them too. Definitely something we will make again.
I used about a pound of chicken tonight and only 1/3 pound cheese. It was still delish! (Trying to cut down on the points....which you can do DRAMATICALLY if you cut cheese!)
Made these tonight and they were wonderful!! :)
